Made with select, rear leg pork knuckles and braised in Din Tai Fung's signature sauce. The pork knuckles are slow-cooked, resulting in a deep caramel color and giving the skin, meat, and tendon a soft, springy texture. Initially a dish privately prepared by chefs at Din Tai Fung, pork knuckles not only make a great meal, but a great gift as well.
